Vegan Egg Salad Sandwiches


Sometimes you need just a simple sandwich, and nothing is better than this simple but tasty classic. Using traditional ingredients with simple vegan substitutions, this sandwich is full of flavor and has the best balance between flavor and simplicity.

Ingredients

1 block of tofu
2-3 tbsp vegan mayo
2-3 tbsp mustard
1/4 cup chopped green onion
1/4 cup sweet pickle relish
1 tsp black salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
Bread
Vegan butter

Steps:

1. Press the tofu for 30 minutes.

2. Crumble the tofu into a mixing bowl.

3. Mix all the ingredients in the bowl (except for the bread and butter).

4. If you prefer a more mayo flavor in your egg salad add some more mayo. If you prefer a sweeter flavor, add some more relish, and if you prefer a more savory flavor add more salt.

5. Toast the bread, and then add vegan butter to each side.

6. Assemble the sandwich.
