Vegan Super Nachos

 

Every guy needs to have nachos, these are a necessity for football games, basketball games, or any sporting event. They are perfect as appetizers for dinner parties and sporting events, but they are also perfect for a quick and easy lunch. These are also affordable, easy to make, and full of protein. It’s a perfect vegan meal!

Ingredients

1 yellow onion chopped
1 bell pepper
½ cup of rice
1 jalapeno
Tortilla chips
14 oz black beans
14 oz pinto beans
Vegan cheese
Vegan yogurt
Salsa
Cilantro
Lime
8 oz vegan ground beef (optional)
Hot sauce (optional)

Steps:

1. Pre-heat oven to 425.

2. Chop the bell pepper, jalapeno, and onion, then roast in the oven for 20-25 minutes.

3. Cook the rice according to the instructions.

4. Cook vegan beef or soyrizo if you are using this option.

5. Place aluminum foil down and lay out tortilla chips evenly on aluminum foil.

6. Layer the nachos toppings in the following order: a) ⅓ of the vegan cheese, b) roasted vegetables, c) cooked rice, d) black beans and pinto beans, e) salsa, f) vegan ground beef (if using), g) remainder of the vegan cheese.

7. Toast the nachos on broil for 5-7 minutes. Make sure to melt the cheese, but don’t burn the chips.

8. After the nachos have been toasted, add the final toppings: a) vegan yogurt, b) cilantro, c) squeeze of lime, d) other hot sauce (if desired)
