Vegan Spanish Potato Soup

 

When it’s a cold day, or you are just feeling like staying inside, there’s nothing like a potato soup. There are varieties of potato soups all over the world. Here is one that is inspired by the flavors of Spain. I hope you enjoy this vegan soup!

Ingredients

2 tbsp olive oil
8 oz Vegan Soyrizo
2 carrots chopped
4 green onions chopped
1 tsp cumin
1 tsp paprika
1 tsp oregano
¼ tsp cayenne pepper
1 tsp black pepper
1 tsp salt
5-6 medium potatoes
6 cups of veggie broth
14 oz coconut milk
2 tbsp tomato paste
Vegan sour cream (or plain yogurt)

Steps:

1. Add all of the vegan soyrizo to a large pot over medium heat. Add olive oil and sautee for 3-5 minutes.

2. Add the chopped carrots and green onions and sautee for another 5-7 minutes.

3. Add all of the spices and sautee for another 2-3 minutes.

4. Add all of the diced potatoes, then the vegetable broth and coconut milk. Bring to a boil, and then simmer for 15 minutes.

5. Add the tomato paste, and then simmer for another 15 minutes.

6. Dish out to a bowl and add vegan sour cream or plain yogurt.
