Vegan Lemon Ricotta Pasta

 

For most people, they buy pre-made tomato sauce in a can or a jar. But if you like making Italian food with more flavor, then making your own pasta sauce is a key skill to develop. And of course, many pasta sauces can be made vegan. It’s so easy and affordable and packed full of protein.

Ingredients

1 tbsp olive oil
1 tbsp salt
16 oz Pasta
14 oz Spinach
Vegan Cheese (optional)


Pasta Sauce:
2 tbsp olive oil
14 oz tofu
1 cup unsweetened plain oat milk
1 lemon
1 tsp salt
1 tsp oregano
1 tsp basil
1 tsp paprika
2 garlic cloves chopped
⅓ cup vegan cheese

Steps:

1. Add all of the pasta sauce ingredients to a blender (including the whole lemon) and blend thoroughly. Make this sauce first, and then set aside.

2. Boil water in a large pot over high heat, add 1 tbsp of olive oil and 1 tbsp of salt. Prepare pasta according to the package instructions.

3. When the pasta is 2 minutes from being cooked al dente, add the spinach to the cooking pasta and allow the pasta water to cook the spinach for the last 2 minutes. Drain the pasta and spinach, but don’t rinse with cold water, return to the pot and add the lemon ricotta sauce.

4. Mix the pasta and ricotta pasta sauce together thoroughly, then plate and add a sprinkle of vegan cheese on top.
