Vegan Chicken Quesadillas

 

Most guys grow up with quesadillas as a constant and reliable meal that’s always there to lean on. And that’s the same for vegan food, quesadillas are incredibly easy to make and they are extremely affordable. Hope you enjoy!

Ingredients

Tortillas
Cherry tomatoes
Bell pepper
Green onions
1 tbsp vegan butter
Vegan cheddar or mozzarella
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp taco seasoning

Steps:

1. Pre-heat the oven to 400 F.

2. Chop the bell pepper and cherry tomatoes and roast for 30 minutes.

3. In a pan sautee the vegan chicken strips with olive oil, salt, pepper, and taco seasoning. Cook for approximately 5-6 minutes. Remove the chicken strips and set to the side.

4. In the same pan add vegan butter and let it melt, then add tortillas. Let the tortillas cook in the butter for about 1 minute then flip. Next add the ingredients in the following order: a) vegan cheese, b) vegan chicken strips, c) roasted bell pepper and tomatoes, d) chopped green onion.

5. Allow the ingredients to cook and look for the cheese to begin melting. Then fold the tortilla over. Cook evenly on both sides until the tortilla has crisped up and browned evenly.
