Vegan Sweet Potato Soyrizo Tacos

If you need a quick and easy dinner, this is a perfect option. It’s easy, tastes great, very filling, and it’s full of protein for the whole family. Since it’s tacos, you can change it up and tailor it to add a variety of toppings, but this recipe is the basics.

Ingredients

Vegan soyrizo
Tortillas
Cilantro
Vegan Yogurt
Lime


Roasted Vegetables:
4 medium sweet potatoes
2 tbsp olive oil
1 yellow onion
1 tsp salt
1 tsp cumin
1 tsp paprika
½ tsp black pepper

Mexican Coleslaw:
Shredded cabbage
Red onion
Shredded carrots
Cilantro
Lime Juice
Jalapeno
¼ cup Vinegar
½ tsp salt
1 tsp sugar

Steps:

1. Pre-heat the oven to 425.

2. Chop the sweet potatoes and yellow onion, add olive oil and spices, then roast for 20-25 minutes.

3. Add all of the coleslaw ingredients to a bowl and massage the ingredients together.

4. Cook the soyrizo in a pan over medium heat.

5. Build the tacos in this order: a) tortilla, b) roasted vegetables, c) soyrizo, d) coleslaw, e) vegan yogurt, f) cilantro.
