Vegan Sweet Potato & Kale Soup

This soup is one of the most affordable soups to make. It has an awesome flavor and hardy and filling. It has plenty of protein for everyone in the family. It’s perfect for the autumn or winter or any cold day!

Ingredients

1 tsp salt
1 tsp black pepper
1 tsp cumin
1 tsp paprika
1 tsp turmeric
6 cups vegetable broth
12-14 oz kale
2 medium sweet potatoes
3 carrots chopped
4 green onions chopped
2 tbsp olive oil
14 oz coconut milk
14 oz canned lentils

Steps:

1. Pre-heat the oven to 425.

2. Chop the sweet potato, drizzle with oil, and roast in the oven for 20-25 minutes.

3. Chop the carrots and green onions, saute in a large pot with olive oil over medium heat. Cook for about 8 minutes.

4. Add all of the salt and spices to the cooking vegetables, then add the kale, and cook for another 5 minutes.

5. Add the vegetable broth, then add the coconut milk. Bring to a boil, then simmer for 10 minutes.

6. Add the cooked lentils and roasted sweet potatoes, and then simmer for another 10 minutes.

7. Serve the soup with a side of toasted bread.
