Vegan Grilled Kimchi Sandwich


Sometimes you need just a simple sandwich, and nothing is better than this simple but tasty classic. Of course when the sandwich is grilled, it goes to a whole other level. This sandwich uses the classic flavors of Korean Kimchi and Gojuchang. I hope you enjoy this vegan creation!

Ingredients

1 block of tempeh
½ tsp Salt
½ tsp Pepper
2 tbsp Olive oil
½ tsp Garlic powder
3 tbsp vegan butter
1 cup Vegan Kimchi
1 tbsp sugar
1 yellow onion
1 Green bell pepper
Bread
3 tbsp Vegan Mayo
2 tbsp Gojuchang paste (divided)
2 tbsp soy sauce
2 tbsp maple syrup (divided)

Steps:

1. Pre heat the oven to 425, and then roast the yellow onion and bell pepper for 20 minutes.

2. Crumble the tempeh into small pieces and place the tempeh in a dry pan over medium heat.

3. Once the tempeh has gotten a little crispy add about 1 tbsp of olive oil. In a separate mixing cup mix together the salt, pepper, garlic powder, soy sauce, 1 tbsp maple syrup, and 1 tbsp gojuchang paste.

4. While the tempeh is cooking, add the mixture to the tempeh and stir thoroughly. Cook for another 2-3 minutes.

5. Once the tempeh has gotten more crispy, take the tempeh off the burner and don't let it burn. Remove the tempeh from the pan and set aside.

6. In the same pan, add 1 tbsp of olive oil over medium heat. Then add the kimchi and sugar, and saute for 5-7 minutes.

7. In a separate mix cup, add the mayo, 1 tbsp maple syrup, and 1 tbsp of gojuchang paste, and mix thoroughly.

8. Heat a separate pan over medium heat, melt the vegan butter. I like to toast my bread slightly before hand (it prevents it from getting soggy). Add the bread to the melted butter, let it toast and crisp up in the pan. Add gojuchang mayo to each side. On one piece of bread, stack the tempeh, roasted onions and peppers, then add the sauteed kimchi. Put the other piece of bread on top and press down.

9. Once one side of the sandwich get crispy, flip and crisp the other side.
