Ingredients

1 tbsp salt
6 cups vegetable broth
12-14 oz kale
5 medium potatoes
¼ cup chopped sage
2 green onions
2 tbsp olive oil
¼ tsp red pepper flake
Tofu sausage:
1 block of tofu
1 tsp salt
1 tsp oregano
1 tsp dried basil
1 tsp fennel seed
½ tsp black pepper

Steps:
1. Press the tofu for 30 minutes to get the liquid out.
2. Bring 6 cups of vegetable broth to a boil. Add 1 tbsp of salt, and then add 5 chopped potatoes. Lower the temperature to medium, and let it simmer for 15 minutes.
3. Add chopped kale, chopped sage, chopped green onions, and crushed red pepper and simmer for another 15 minutes.
4. In a separate pan, crumble the tofu over medium with olive oil. Saute for 7-8 minutes and add all of the tofu sausage spices.
5. Once the potatoes have cooked, serve the soup into a bowl and add the vegan sausage to each bowl of soup.
