Vegan Palak Paneer

 

If you are like me, you love Indian food. But Indian dishes that have “Paneer” in them contain an Indian-made cheese. Most Paneers are served a cubed cheese, so a simple substitution for this is tofu. When you see the word “Palak” that means that it contains a very tasty spinach gravy. With that said, you can easily make your own vegan Palak Paneer at home, I hope you enjoy!

Ingredients

Rice
14 oz coconut milk
Vegan Yogurt (optional)
Hot Sauce (optional)

Tofu Paneer:
2-3 tbsp olive oil
14-15 oz tofu
2 tbsp cornstarch
2 tsp salt

Palak Sauce:
1 green bell pepper
1 inch of ginger
2 tbsp coconut oil
1 large tomato
1 jalapeño
1 tsp salt
1 tsp black pepper
1 tsp cumin
1 tsp paprika
1 tsp yellow curry
12oz fresh spinach
3 green onions
½ cup cilantro

Steps:

1. Press the tofu for 30 minutes

2. Chop the green peppers, ginger, jalapeno, and tomato, and add to a pan with coconut oil over medium heat.

3. Saute for about 4-5 minutes and add all the spices. Then saute for another 4-5 minutes until vegetables are soft.

4. Add cooked vegetables to the blender, then add the remaining Palak sauce ingredients and blend thoroughly.

5. Put the blended Palak sauce into the same pan over medium heat. Add coconut milk, stir, and cook on medium low.

6. Cook rice according to the instructions.

7. Cube the tofu, and then toss with the tofu ingredients in a bowl. Add to another pan over medium heat and pan fry until each side is crispy.

8. Add the pan fried tofu to the Palak gravy and cook for 2-3 minutes.

9. When the rice is completed, put the rice on a plate, then add the Palak Paneer on top of the rice. Top with vegan yogurt or hot sauce.
