Vegan Miso Soup (Low Fodmap)


One of the best Asian flavors is miso, and most people are familiar with a simple miso soup. This is a miso soup with a variety of layers of flavor. This version incorporates all of those wonderful flavors in a Low Fodmap version. I hope you enjoy this vegan soup!

Ingredients

12 oz ramen
Air-Fried Tofu
2 carrots
1 inch fresh ginger
5 green onions
8 cups veggie broth
3 tbsp soy sauce
3 tbsp miso paste
2 tbsp rice vinegar
Baby Bok Choy

Steps:

1. Prepare the ramen noodles according to the instructions.

2. Add chopped green onions, ginger, and carrots to a large pot with olive oil. Saute for 3-4 minutes.

3. Add miso paste, soy sauce, rice vinegar and Thai chilis and saute for another 1-2 minutes

4. Add vegetable broth and then bring to a boil. After it reaches a boil, add the bok choy and then let the soup simmer for about 8-10 minutes.

5. Make air-fried tofu.

6. Assemble the soup, add ramen noodles to a bowl, lastly top with broth.
