Vegan Korean Chicken Salad

 


This is a really cool variation of a vegan chicken salad. In this case we’re taking a regular vegan chicken salad and infusing some Korean flavors into it. You can eat this as a sandwich or on its own. So for all you former chicken salad lovers out there, I hope you enjoy this vegan version!

Ingredients

Bread
Cilantro
Sriracha
Hoisin Sauce


Salad ingredients:
Slow cooked jackfruit
Tofu
2 baby bok choy
3 green onions
1 carrot
⅓ cup vegan mayo
2 tbsp sriracha
2 tbsp gojuchang
2 tbsp maple syrup
½ tsp salt
½ tsp black pepper
1 lime

Steps:

1. Mix all of the salad ingredients together.

2. Toast the bread.

3. Add the salad on top of the bread. Top with cilantro, sriracha, and hoisin sauce.
