Vegan Scorpion Pepper Sushi Bowl

 

Sometimes you need a simple quick dinner, and in those cases a bowl is a great meal option. With a bowl option, you can transform it to match whatever style of food you’d like. For this bowl we wanted a sushi with some added kick with spice.

Ingredients

Rice
Carrots
1 Red Onion
Edamame
1 Cucumber
1 Avocado
1 inch fresh Ginger
White vinegar
Sugar
Salt

Sauce Ingredients:
¼ cup vegan mayo
1 tsp Scorpion Pepper sauce
1 tbsp Sriracha
1 tbsp maple syrup
1 tsp salt
3 tbsp unsweetened plain oat milk

Air-Fried Tofu:
1 block of firm Tofu
4 tbsp olive oil
2 tbsp of soy sauce
2 tbsp cornstarch
2 tbsp flour
¼ tsp salt
¼ tsp garlic powder
¼ tsp black pepper

Steps:

1. Press the tofu for 20-30 minutes to get the moisture out.

2. Cut all the vegetables. Add the red onion and ginger to ½ cup of white vinegar, 1 tbsp sugar, and 1 tsp of salt. Let the red onions sit for 30 minutes.

3. Add the olive oil, soy sauce, and 1 tbsp of sriracha to a mixing bowl. Next tear the tofu into chunks and throw them into the mixing bowl. With your hand stir it around until the oil has thoroughly coated the tofu.

3. Add the cornstarch, flour, salt, garlic powder, and black pepper to the tofu mixture. Then stir it again with your hand to coat evenly.

4. Cook the tofu in an air fryer on 370 degrees for 10 minutes. After 10 minutes, shake the basket, and cook on 370 for another 8 minutes. (If you don’t have an air fryer, you can bake at 400 degrees for 15 minutes, then turn them over, and bake for another 15 minutes).

5. Cook the rice.

6. Mix all of the sauce ingredients together.

7. Prepare the bowl in the following order: a) rice, b) air-fried tofu, c) chopped vegetables, d) edamame, e) avocado, f) pickled onions and ginger, g) scorpion pepper sauce.
