Vegan Korean BBQ Tacos

 

Tacos are always a good thing, especially when they are vegan. This is a cool taco that I created using Korean flavors like Gojuchang peppers and vegan kimchi. I think you’ll really enjoy how easy and affordable this meal is. Check it out and give it a try!

Ingredients

4 tbsp vegan kimchi
Chopped Cilantro
Chopped Green onion
Lime
Tortillas
Vegan Mayo
Sriracha

Korean BBQ Jackfruit:
2 tbsp gojuchang paste
4 tbsp brown sugar
1 tsp salt
1 tsp black pepper
½ tsp liquid smoke
1 tbsp rice vinegar
1 tbsp olive oil
1 tbsp soy sauce
½ cup vegetable broth
28oz jackfruit

Steps:

1. Add all of the ingredients for the Korean BBQ jackfruit into a large pot over medium heat.

2. Sauté the ingredients for about 5 minutes, then lower the heat to medium low, cover, and then let it slow cook for 30-40 minutes, until the jackfruit is soft and tender.

3. Mix ⅓ cup of vegan mayo with 2 tbsp of sriracha to make sriracha mayo.

4. After the jackfruit has cooked, place the tortillas on a plate and build the tacos in the following order: a) BBQ jackfruit, b) vegan kimchi, c) chopped cilantro and green onion, d) sriracha mayo, e) squeeze of lime
