Vegan Eggroll Bowl (Low Fodmap)

 

If you need an easy dinner and something tasty that everyone will enjoy, then try a simple Eggroll Bowl. This is basically like a deconstructed eggroll in a bowl. So think of all the wonderful flavors you love in an eggroll, and don’t forget to use plenty of sweet and sour sauce to replicate these classic flavor combinations. This vegan version is more affordable, more healthy, and low fodmap!

Ingredients

1 tbsp olive oil
3 tbsp soy sauce
2 tbsp maple syrup
1 tsp toasted sesame oil
14-15 oz block of tofu
1-2 tsp salt
1 tsp black pepper
1 cup chopped green onions
Rice
10-12 oz chopped cabbage
2 carrots chopped
2 celery stalks chopped
Sweet chili sauce

Steps:

1. Press the tofu for 30 minutes to get the moisture out.

2. Cook the rice according to the rice instructions.

3. In a small pan crumble the tofu and add olive oil, then sauté for 4-5 minutes over medium heat. Add soy sauce, salt, and pepper and sauté for another 4-5 minutes, and then set aside.

4. In a large pan over medium add the cabbage, carrots, celery, and green onions. Sauté these together for about 10 minutes so that they get soft.

5. Add to the cabbage mixture, soy sauce, maple syrup, and toasted sesame oil. Then sauté for another 5 minutes.

6. Add the rice to bowls, and then add the cabbage mixture to the rice. Top with sweet chili or sweet and sour sauce.
