Vegan Orange Udon Noodles

 

I think udon noodles are the bomb. I love the thick hardy noodles, and you need a good sauce to go with them. This is an orange nam jim sauce that is sweet and savory and provides the perfect complement to the udon noodles. Check it out and give it a try!

Ingredients

Udon noodles
1 zucchini
2 shallots
2 garlic cloves
12 oz chopped spinach
1 tbsp gojuchang paste
1 tbsp olive oil
1 tbsp soy sauce
14-15 oz block of tofu
2 tbsp cornstarch
1-2 tsp salt
¼ cup chopped basil
¼ cup chopped cilantro

Sauce Ingredients:
¼ cup brown rice
1-2 tsp crushed red pepper flake
3 oranges
2 tbsp soy sauce
1 tbsp maple syrup
1 tbsp hoisin
1 tbsp olive oil

Steps:

1. Press the tofu for 30 minutes to get the moisture out.

2. In a small pan toast the brown rice and crushed red pepper flake over medium heat for 2-3 minutes.

3. Add the rice and pepper flake to a blender and blend to crush them slightly. Then add all of the ingredients for the sauce (note: I like to peel the oranges, but leave the peel on one of the oranges), and blend thoroughly.

4. In a large pan add some olive oil, and then add the chopped zucchini, shallots, garlic, and spinach, and saute for 5-6 minutes. Then add soy sauce and gojuchang paste, stir, and sautee for another 2-3 minutes.

5. In a separate bowl cube the tofu and coat with the cornstarch, and mix thoroughly.

6. Prepare the udon noodles according to the package instructions.

7. After the udon noodles are ready, drain the water, rinse, and add the sauteed vegetables from the pan.

8. Put the pan back on the stove, add some olive oil, and then add the tofu to saute over medium heat. Saute for 5-6 minutes until crispy, add an occasional spritz of soy sauce.

9. Once the tofu is cooked and crispy, add to the udon and vegetable mixture. Then add the orange nam jim sauce and mix thoroughly.

10. Plate the noodles top with freshly chopped basil and cilantro.
