2 sweet potatoes
1 head of cauliflower
1 yellow onion
14oz can of chickpeas
rice
Spinach
Parsley
Cherry Tomatoes
1 tsp salt
1 tsp black pepper
1 tbsp cumin
1 tbsp paprika
1 tsp garlic powder
Lemon Tahini Dressing
3 tbsp tahini
3 tbsp water
1 tbsp maple syrup
1 lemon
1 tsp salt
1 tsp pepper
1 tsp paprika

Steps:
1. Pre-heat the oven to 425. Chop the sweet potatoes and cauliflower, and place them in a baking dish along with the chickpeas.
2. Add the olive oil, then all the spices, and mix thoroughly. Then bake for 30 minutes.
3. Prepare the rice according to the instructions.
4. Mix all of the dressing ingredients together for the dressing.
5. Add rice to the bowl, then add roasted vegetables, then top with arugula, parsley, cherry tomatoes, and then the tahini dressing.
