Vegan Peruvian Burritos

Burritos are some of the easiest vegan dinners you can make. Here is an example of one, but you can seriously modify this and change it up into indefinite possibilities. This burrito incorporates Peruvian flavors as its anchor, and has an amazing green sauce that elevates the flavor to the next level. I hope you enjoy this vegan creation!

Ingredients

Tortillas
Rice
Two 14 oz cans of pinto beans
1 yellow onion
3 large sweet potatoes
1 red or orange bell pepper
12 oz frozen corn
Lettuce
1 tsp salt
1 tsp black pepper
1 tbsp cumin
1 tbsp paprika
1 tsp garlic powder

Peruvian Green Sauce:
3 garlic cloves
1-2 whole jalapenos
1 lime
1 whole bunch of cilantro
½ cup vegan yogurt
1 cup water
1 tsp salt

Steps:

1. Pre-heat the oven to 375. Chop the onion, bell pepper, sweet potatoes, and place them in a baking dish along with frozen corn.

2. Add the olive oil, then all the spices, and mix thoroughly. Then bake for 30 minutes.

3. Prepare the rice according to the instructions.

4. Blend all of the Green Sauce ingredients together in a blender.

5. Build the burrito with the following ingredients: 1) tortillas, 2) rice, 3) pinto beans, 4) roasted vegetables, 5) lettuce, 6) Green Sauce.
