Vegan Pizza Salad


This is a new take on combining pizza flavors with salad, and it is surprisingly easy to make. This is a great recipe if you need to make a quick and easy dinner. Or it’s a great option if you need to make a salad for dinner guests. I hope you enjoy this invention!

Ingredients

Tempeh Bacon (see my recipe for the Tempeh Bacon here: Manny's Vegan Tempeh Bacon (veganmanfood.blogspot.com))
Lettuce
Kalamata olives
Red onion
Cherry Tomatoes
Vegan parmesan or vegan feta
2 pieces of naan
2 tbsp olive oil
Salt and pepper
1 tsp italian seasoning
1 tsp garlic powder

Vegan Pizza Dressing:
¼ cup mayo
2 tbsp olive oil
2 tbsp apple cider vinegar
½ tsp salt
½ tsp black pepper
1 tbsp kalamata olive brine
1 tsp nutritional yeast
½ tsp paprika
½ tsp red pepper flake

Steps:

1. Preheat the oven to 375 degrees.

2. Cut the naan into cubes and throw into a mixing bowl. Add the olive oil, garlic powder, italian seasoning, salt and pepper, then mix thoroughly.

3. Place the cubes of naan on a baking sheet and put in the oven for 8 minutes. Then flip the cubes over and put back in the oven for another 8 minutes. If the crouton aren’t getting toasted enough, leave them in the oven for a few minutes longer.

4. While making the croutons, make the tempeh bacon: Manny's Vegan Tempeh Bacon (veganmanfood.blogspot.com).

5. While the croutons and tempeh bacon are cooking, make the Pizza dressing by mixing all of the ingredients together in a mixing cup.

6. Prep the lettuce, and cut the olives and onions. Place the lettuce, cherry tomatoes, onions, and olives on plates.

7. Once the tempeh is ready, place tempeh on the salad.

8. Once the croutons are ready, place on salad.

9. Top salad with dressing and vegan parmesan cheese.
