Vegan Lime Harissa Tofu

Ingredients

1 yellow onion
3 garlic cloves
2 tbsp olive oil
1 tsp cumin
1 tsp black pepper
1 tsp salt
Limes
2 tbsp tomato paste
2 tbsp Harissa paste
1 tsp onion powder
½ cup chopped parsley
12-14 oz tofu
2 tbsp corn starch
8-10 oz spinach
rice

Pickled red onion:
1 red onion
4 tbsp apple cider vinegar
1 tsp salt
2 tsp sugar

Steps:

1. Chop the red onion and place them in a bowl and add the pickling ingredients along with about 1 cup of hot water. Allow this to sit for 30 minutes or more.

2. Cut tofu into cubes and toss in corn starch. Add to an air-fryer and air fry for 10 minutes, toss them, and then air fry for another 10 minutes.

3. Prepare the rice according to the instructions.

4. In a pan over medium heat, add the olive oil, yellow onion, and garlic. Then saute for 5 minutes. Then add the zest of 1 lime, and then add the lime juice, and saute for another 2-3 minutes.

5. Add all of the spices, then add the tomato and harissa paste. Stir this in thoroughly then add ¾ cup of water and stir until this has incorporated into the sauce.

6. Add the parsley, air-fried tofu, and spinach, then cook together until the spinach has wilted, and the tofu is fully coated. Approximately 5 minutes.

7. Plate in the following order: 1) Add rice to the plate, 2) Add the harissa lime tofu mixture, 3) top with pickled red onion.
