Maple Ghost Pepper Tofu Tacos

Ingredients

½ red onion
10-12 oz broccoli slaw
¼ cup apple cider vinegar
1 tsp salt
2 tsp sugar
Limes
1 avocado
Cilantro
Tortillas
Air-fried Tofu (see recipe here: Air-Fried Tofu)

Maple Ghost Pepper Dressing:
4 tbsp olive oil
1 tbsp soy sauce
1 tsp salt
3 tbsp maple syrup
1 tsp ghost pepper flake

Steps:

1. Press the tofu for 30 minutes.

2. Prepare Air-Fried Tofu. See my recipe here: Air-Fried Tofu

3. Chop ½ red onion into long slices, and add the broccoli slaw to a bowl. Then add apple cider vinegar, salt, sugar, and lime juice. Then add hot water to fill up to where the mixture is right below the brine. Let this sit for 30 minutes or more.

4. Add all the ingredients together for Maple Ghost Pepper Dressing, and mix thoroughly. When the air-fried tofu is done, toss the tofu in the dressing.

5. Build the taco in the following order: 1) tortilla, 2) mashed avocado, 3) pickled broccoli slaw and onions, 4) add air-fried tofu, 5) top with cilantro and lime juice.
