Vegan Mujadara Salad

This is a salad twist on an ancient staple in Middle East cuisine. It is surprisingly easy to make for a quick and easy dinner or lunch. It’s also a great option if you need to make a salad for dinner guests. I hope you enjoy this vegan creation!

Ingredients

Tahini Dressing:
4 tbsp tahini
2 tbsp water
2 tbsp apple cider vinegar
2 tbsp olive oil
2 tbsp dijon mustard
1 tbsp agave
1 tsp garlic powder
1 tsp salt
1 tsp paprika

Salad:
Lettuce
Kalamata olives
Vegan parmesan or vegan feta
2 cups dry green lentils
2 cups dry rice
2 tbsp olive oil
1 large red onion
Tomato
Hummus
Salt and pepper

Steps:

1. Cook the green lentils and rice separately according to their instructions. When each are finished cooking, mix them together.

2. Mix all of the dressing ingredients together and mix thoroughly until smooth.

3. Slice the red onion into long thin strips, and add to a pan over medium heat with olive oil. Sautee until the red onions caramelize.

4. Prep the lettuce, tomatoes, and cut the olives. Place the lettuce, tomatoes, and olives on plates or in a bowl. Then add the following: 1) about ½ cup of lentil and rice mixture, 2) 2 tbsp of hummus, 3) caramelized onion, 4) vegan feta, 5) tahini dressing.
