Vegan Greek Chicken Flatbread


If you’re tired of the same pizza type dinners, then change it up with a flatbread. It’s like a pizza, but with a variety of more toppings and flavors. This is a really unique one based on a Greek chicken gyro. Try it out and make it your own!

Ingredients

Whole wheat flatbread dough ingredients:
1 cup regular flour
1.5 cups of whole wheat flour
1 cup water
2 tbsp olive oil
1 tbsp yeast
2 tbsp sugar
1 tbsp salt

Flatbread toppings:
Air-fried Tofu (see recipe here: Air-Fried Tofu)
Kalamata olives
Vegan Pesto
Vegan mozzarella
½ cup chopped red onion
Arugula
Vegan tzatziki sauce
Balsamic vinegar

Steps:

1. Mix the sugar in 1 cup of warm water, let it dissolve thoroughly. Then add the yeast and mix thoroughly. Let the mixture sit for 5 minutes.

2. Gradually add the mixture of both flours. After adding 1 cup of flour, add the olive oil and salt and mix them in thoroughly. Next gradually add the rest of the flour until the dough firms up and is no longer sticky.

3. Kneed the dough for about 2-3 minutes. Place the dough in a bowl and cover with a kitchen towel, and let this rise for about 2-3 hours.

4. Prepare Air-Fried Tofu. See my recipe here: Air-Fried Tofu

5. Preheat the oven to 450.

6. After the dough has risen, roll the dough out, sprinkle flour on it, and roll it flat.

7. Place the flat dough on either a pizza stone or a cookie sheet. Bake for 7 minutes.

8. Remove from the oven, flip over and begin adding toppings in the following order: a) vegan pesto, b) chopped red onion, c) olives, d) vegan mozzarella, e) air-fried tofu, f) drizzle balsamic vinegar over the flatbread.

9. Bake flatbread with all the toppings for 8-10 minutes.

10. After cooking the flatbread top with arugula and tzatziki sauce.
