Vegan Shrimp and Grits

 

Here is a famous southern dish that can be easily transformed into a vegan classic. The first element is cheesy grits which provides a nice pillowy base for seared vegan shrimp cooked in a warm Cajun sauce. Of course you can cook this as spicy as you’d like it. You’ll find that the vegan substitutions are pretty easy and much more affordable. I hope you enjoy this vegan version!

Ingredients

Grits:
1 cup grits
3 cups water
2 tbsp vegan butter
½ cup vegan cheddar

Shrimp:
Heart of palm
4 tbsp vegan butter
1 lemon

Cajun Sauce:
1 yellow onion
2 garlic cloves
2 tbsp flour
1 cup of water
2 tbsp Cajun seasoning
¼ cup ketchup or tomato sauce
1 tbsp cayenne hot sauce

Steps:

1. Add 3 cups of water to a pot along with 2 tsp of salt. Bring the water to a boil, add the 1 cup of grits, and lower the heat to medium. Let the grits cook until they are firm and sticky.

2. Add the vegan butter and cheddar to the grits, and cook for another 2-3 minutes until they have melted and mixed in.

3. Chop the heart of palm into circular discs about ½ inch thick. Sautee the chopped heart of palm over medium heat in vegan butter and lemon juice until they are seared on each side.

4. After the heart of palm has been seared, remove from the pan and set aside. In the same pan add olive oil or vegan butter, and then add chopped onion. Sautee for 4-5 minutes.

5. Next add the chopped garlic and saute for another 2-3 minutes.

6. Next add 2 tbsp of flour and whisk. Gradually add 1 cup of water and whisk.

7. Add the ketchup or tomato sauce, the Cajun seasoning, and cayenne hot sauce and mix thoroughly until it turns into a sauce.

8. Next add the seared heart of palm back into the sauce and mix until the sauce gently coats all of the heart of palm.

9. Plate the grits first, and then add the vegan shrimp on top along with the Cajun sauce.
