Vegan Jerk Tofu Bowl

If you love the simplicity and variety of grain bowls, then you’ll love this recipe. Here is an easy vegan Jerk Tofu Bowl recipe that incorporates some awesome Carribean jerk flavors into a simple bowl!

Ingredients

1 red onion
1 red bell pepper
12-14 oz chunk pineapple
1 avocado
rice
Air-fried Tofu (see recipe here)

Jerk Mayo Dressing:
¼ cup vegan mayo
1 tbsp olive oil
1 tbsp apple cider vinegar
¼ tsp allspice
¼ tsp ground clove
½ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
½ tsp thyme

Steps:

1. Pre-heat the oven to 425 F. Chop the onion and bell pepper, and place them in a baking dish, and put them in the oven for 30 minutes.

2. Prepare Air-Fried Tofu. See my recipe here: Air-Fried Tofu

3. Prepare the rice according to the instructions.

4. Add all the ingredients together for Jerk Mayo Dressing, and mix thoroughly.

5. Build the bowl in the following order: 1) Add rice to the bowl, 2) Add roast onions and peppers, 3) add air-fried tofu, 4) add chunk pineapple, 5) then top with Jerk Mayo Dressing.
