Vegan Avocado Lemon Alfredo

Pasta is inherently vegan, but it’s the sauce you have to be careful with. Here is a recipe where the sauce is totally vegan and made from all vegetables. It’s incredibly easy to make and it’s extremely affordable. Hope you enjoy!

Ingredients

16 oz pasta
Fresh parsley
Kalamata olives
1 tbsp salt
1 tbsp olive oil

Cashew Alfredo Sauce:
¾ cup of cashews
½ cup of water
2 tbsp olive oil
4 garlic cloves
1 tsp salt
½ tsp pepper
2 tbsp nutritional yeast
1 avocado
1 lemon
1 cup oat milk

Steps:

1. Soak the cashews in water for 30-60 minutes.

2. Drain the cashews and put them in a blender with all of the other ingredients for the Alfredo sauce. Blend thoroughly.

3. Make the pasta according to the instructions. After draining the water, mix olive oil in with the pasta.

4. Add the Alfredo sauce to the pasta and mix thoroughly.

5. Top with freshly chopped parsley and kalamata olives.
