Most Indian food is vegetarian, and some of it is vegan. Some making vegan Indian food is actually pretty easy. Here is an easy Samosa Bowl recipe that incorporates some awesome Indian flavor into a simple bowl!

Ingredients

5 yellow potatoes
2 sweet potatoes
1 head of cauliflower
1 yellow onion
14oz can of chickpeas
rice
1 tsp salt
1 tsp black pepper
1 tbsp turmeric
1 tbsp cumin
1 tbsp garam masala
1 tsp garlic powder
Mango Chutney (see recipe here)
Cilantro Chutney (see recipe here)

Steps:
1. Pre-heat the oven to 425. Chop all of the vegetables, and place them in a baking dish.
2. Add the olive oil, then all the spices, and mix thoroughly. Then bake for 30 minutes.
3. Prepare the rice according to the instructions.
4. Add rice to the bowl, then add roasted vegetable, then top with mango chutney and then cilantro chutney.
