Most Indian food is vegetarian, and some of it is vegan. Some making vegan Indian food is actually pretty easy. Here is an easy Mango Chutney recipe that you can use on every single Indian meal you cook!

Ingredients

2 ripe mangoes
2 shallots
2 jalapenos
1 tbsp olive or coconut oil
½ cup brown sugar
½ cup apple cider vinegar
2 tbsp lime juice
1 inch of ginger chopped
1 tsp salt

Steps:
1. Add the shallots, jalapenos, and ginger to a pan over medium heat with olive or coconut oil. Saute for 4-5 minutes until soft.2. Add the mangoes and continue to saute as the mangoes soften, approximately 4-5 minutes.
3. Add the sugar, apple cider vinegar, lime juice, and salt, and continue to saute. Cook slowly until the mixture cooks together for about 10 minutes.
4. Allow the sauce to rest and cool before serving, approximately 5-10 minutes.
