Vegan Buttermilk Pancakes


One of the first vegan recipes I learned was making vegan pancakes, it’s so easy!! The greatest part about vegan pancakes is that they are lighter and that means you can eat more. There are a few variations that you can do if you have more time and depending on how fluffy you like your pancakes.

Ingredients

1.5 cups of flour
1.5 cups of oat milk or almond milk
2 tbsp apple cider vinegar
3 tsp baking powder
1 tsp salt
1 tsp vanilla extract
2 tbsp sugar
3 tbsp vegan butter melted
3 tbsp aquafaba (optional)
Butter or oil for frying pan

Steps:
1. Add to a large mixing bowl the oat or almond milk and add apple cider vinegar, and let it sit for 5 minutes.
2. Add all of the dry ingredients to a 2nd mixing bowl.
3. Optional: If you have time and like fluffier pancakes, put the aquafaba in a mixing bowl with the sugar and whisk until it gets foamy.
4. Add the vanilla extract to the oat or almond milk, add the melted butter, and then add the optional aquafaba.
5. Gradually add the dry mixture while whisking the wet and dry ingredients together. Keep gradually adding and whisking until they are completely combined.
6. Heat a frying pan over medium heat. Add butter or oil to the pan. Then add ¼ cup of pancake batter to the pan. If the batter is too stiff, it needs more oat milk. If the batter is too wet, then it needs more flour. If you want thin pancakes, then keep the batter wet and let it spread thin on the pan. If you want thick pancakes, then keep the batter a little stiff so it stays thick.
7. After the pancake begin to bubble on the frying pan, then flip and fry for another 2 minutes.
8. Repeat until all of the batter has been used.
