Vegan Locro Stew

 

This is a classic Argentinian stew, and it’s a new one for me. It’s traditionally made with a lot of meat, however the key to Locro is that the base is made from root vegetables. It’s really easy and affordable to make. This is perfect for an autumn or winter day!

Ingredients

1 onion
2 Carrots
1 Yellow Bell Pepper
1 Yellow Potato
2 Sweet Potatoes
¼ cup olive oil
8 cups veggie broth
1 tsp salt
1 tsp garlic powder
1 tsp pepper
1 tsp paprika
2 cans white beans
20oz hominy
8oz soyrizo

Steps:
1. Saute the onion, carrots, bell pepper, yellow potato, and sweet potato in the bottom of a dutch oven or large pot for 8-10 minutes.
2. Add the broth and bring to a boil. Once boiling, lower the heat to simmer for 20 minutes.
3. Add the salt, spices, beans, and hominy, then simmer for another 20 minutes.
4. While the soup is cooking, saute the soyrizo in a separate pan for 5-6 minutes.
5. After the soup has cooked, turn the heat off and add the soyrizo.
