Vegan Habachi Tofu

 

If you like Habachi restaurants, then you’ll love this recipe! You can have this Japanese-American food at home as much as you’d like. Plus this version is made with healthy all-vegan ingredients. Once you have this, you’ll never order out again….except for those days you don’t feel like cooking. I hope you enjoy this vegan dinner!

Ingredients

Tofu:
1 block of firm Tofu
4 tbsp olive oil
2 tbsp of soy sauce
2 tbsp cornstarch
2 tbsp flour
¼ tsp salt
¼ tsp garlic powder
¼ tsp black pepper

Remaining Ingredients:
Yum Yum Sauce (see my recipe for vegan Yum Yum sauce)
1 yellow onion
2 carrots
1 zucchini
2-3 cloves of garlic
1 inch of ginger
2 tbsp soy sauce
2 tbsp sriracha
1 tsp salt
½ tsp black pepper
Rice

Steps:
1. Press the tofu for 20-30 minutes to get the moisture out.
2. While the tofu is pressing make the rice.
3. Add the olive oil, soy sauce, and 1 tbsp of sriracha to a mixing bowl. Next tear the tofu into chunks and throw them into the mixing bowl. With your hand stir it around until the oil has thoroughly coated the tofu.
4. Add the cornstarch, flour, salt, garlic powder, and black pepper to the tofu mixture. Then stir it again with your hand to coat evenly.
5. Cook the tofu in an air fryer on 370 degrees for 10 minutes. After 10 minutes, shake the basket, and cook on 370 for another 8 minutes. (If you don’t have an air fryer, you can bake at 400 degrees for 15 minutes, then turn them over, and bake for another 15 minutes).
6. Mix the corn starch with warm water, then add all the remaining Kung Pao sauce ingredients, stir thoroughly, and set to the side.
7. In a pan over medium heat, sautee the onions, carrots, and zucchini for 7-8 minutes. Then add the garlic, ginger, salt, pepper, sriracha, and soy sauce, then sautee for another 4-5 minutes.
8. Mix all the ingredients to make vegan Yum Yum sauce.
9. Create plates in the following order: 1) rice, 2) vegetables, 3) fried tofu, 4) top with vegan Yum Yum sauce.
