Vegan Tempeh Reuben

 

Sometimes you need just a simple sandwich, and nothing is better than this simple but tasty classic. Using my vegan bacon method, but using it to create vegan corned beef, this sandwich is full of flavor and has the best balance between flavor and simplicity. You can either buy your sauerkraut or make your own. I hope you enjoy this vegan version!

Ingredients

1 block of tempeh
2 tbsp coconut oil

Flavor Sauce:
2 tbsp olive oil
2 tbsp soy sauce or aminos
1 tbsp maple syrup or agave
2 tbsp vegan worcestershire sauce
¼ tsp liquid smoke
½ tsp salt
1 tsp paprika
½ tsp onion powder
½ tsp garlic powder

Vegan Russian Dressing:
½ cup vegan mayo
½ onion grated with a cheese grater
4 tbsp ketchup
2 tbsp horseradish sauce
1 tsp vegan worcestershire sauce
1 tsp apple cider vinegar
¼ tsp salt
¼ tsp black pepper

Sandwich:
Bread
Sauerkraut
Vegan swiss, gouda, or provolone
4 tbsp vegan butter

Steps:
1. Cut the tempeh into thin strips or thin squares.
2. Place the tempeh in a dry pan over medium heat.
3. Once the tempeh has gotten crispy on one side, flip it over to get crispy on the other side.
4. Next add about 2 tbsp of coconut oil or olive oil
5. While the tempeh is cooking, add all the flavor sauce ingredients into a mixing bowl and measuring cup, and stir thoroughly.
6. Once the tempeh has gotten crispy on both sides add the flavor sauce and cook in the sauce for 2-3 minutes. Take the tempeh off the burner and don't let it burn.
7. Put the tempeh on some paper towels to get the excess oil off.
8. Mix all the ingredients for the vegan Russian dressing
9. Heat a pan over medium heat, melt the vegan butter. I like to toast my bread slightly before hand (it prevents it from getting soggy). Add the bread to the melted butter, let it toast and crisp up in the pan. Add the Russian dressing to each side. On one piece of bread, stack the tempeh, sauerkraut, then vegan cheese. Put the other piece of bread on top and press down.
10. Once one side of the sandwich get crispy, flip and crisp the other side.
