Vegan Kung Pao Tofu

 

“George likes his Kung Pao spicy!” And I agree! This is a traditional Chinese restaurant meal cooked at home, and made with all vegan ingredients. Once you have this, you’ll never order out again….except for those days you don’t feel like cooking. I hope you enjoy this vegan dinner!

Ingredients

Tofu:
1 block of firm Tofu
4 tbsp olive oil
2 tbsp of soy sauce
2 tbsp cornstarch
2 tbsp flour
¼ tsp salt
¼ tsp garlic powder
¼ tsp black pepper

Kung Pao Sauce:
3 garlic cloves chopped
1 inch of ginger chopped
⅓ cup soy sauce or aminos
2 tbsp sriracha
1 tsp crushed red pepper
1 tbsp rice wine vinegar
½ cup of warm water mixed with 1 tbsp corn starch

Remaining Ingredients:
1 yellow onion
1 red or yellow bell pepper
1 zucchini
2 dried chilis
⅓ cup peanuts
Rice
Green onions diced

Steps:
1. Press the tofu for 20-30 minutes to get the moisture out.
2. While the tofu is pressing make the rice.
3. Add the olive oil, soy sauce, and 1 tbsp of sriracha to a mixing bowl. Next tear the tofu into chunks and throw them into the mixing bowl. With your hand stir it around until the oil has thoroughly coated the tofu.
4. Add the cornstarch, flour, salt, garlic powder, and black pepper to the tofu mixture. Then stir it again with your hand to coat evenly.
5. Cook the tofu in an air fryer on 370 degrees for 10 minutes. After 10 minutes, shake the basket, and cook on 370 for another 8 minutes. (If you don’t have an air fryer, you can bake at 400 degrees for 15 minutes, then turn them over, and bake for another 15 minutes).
6. Mix the corn starch with warm water, then add all the remaining Kung Pao sauce ingredients, stir thoroughly, and set to the side.
7. In a pan over medium heat, sautee the onions, bell pepper, and zucchini for 7-8 minutes. Then add the dried peppers and peanuts, and sautee for another 4-5 minutes.
8. Add the Kung Pao sauce to the pan and sautee until it thickens up.
9. Create plates in the following order: 1) rice, 2) fried tofu, 3) vegetables and sauce on top, 4) top with chopped green onion.
