Vegan Cajun Red Beans and Rice

 

This is a quick and easy meal, especially for those looking to save money, it’s Cajun Red Beans and Rice. And yes, it’s naturally vegan. Even though it has simple ingredients, it is full of rich and complex flavors. You can make a huge load of this dinner, and have massive amounts of leftovers.

Ingredients

Cajun spices:
2 tbsp paprika
2 tsp cayenne pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp oregano
1 tsp thyme
2 tsp black pepper
1 tbsp salt
1 tsp red pepper flake

16 oz dry red beans
1 onion
4 garlic cloves
1 can of fire roasted tomatoes
2 bay leaves
1 tbsp salt
2 cups brown rice

Serve with a tofu crumble cooked in the cajun seasoning (optional)

Steps:
1. Add the dry beans to a dutch oven and fill with water. Let the beans soak up the water for 8 hours.
2. Drain the water, and rinse the beans. Fill the dutch oven with water again, fill to about 1.5 inches over the beans. Add the 1 tbsp of salt and bay leaves. Bring to a boil, and then let the beans simmer for 7 hours.
3. After cooking for 7 hours, add half of the cajun seasoning, chopped onion, garlic, and fire roasted tomatoes. Let the bean cook for another 1 hour.
4. During the final hour of cooking the beans, cook the rice. Add while the rice is cooking add the other half of the cajun seasoning.
5. Once everything has cooked, add the rice to a plate, and add the beans on top.
