Vegan Seared Shrimp Pizza

Let’s be clear, you do not have to give up pizza when going vegan. Just think that the quality of you pizza is going to improve. You will find greater variety instead of always getting the same “cheese and pepperoni” pizza all the time. Here’s a pizza made with seared heart of palm, arugula, and garlic cheese sauce as a base.

Ingredients

Whole wheat pizza dough ingredients:
1 cup regular flour
1.5 cups of whole wheat flour
1 cup water
2 tbsp olive oil
1 tbsp yeast
2 tbsp sugar
1 tbsp salt

Pizza toppings:
Heart of palm
4 tbsp vegan butter
1 lemon
2 tbsp flour
1 cup of plain unsweetened oat milk
3 garlic cloves
Arugula
Black olives
Red onion chopped
Vegan mozzarella
Balsamic vinegar

Steps:
1. Mix the sugar in 1 cup of warm water, let it dissolve thoroughly. Then add the yeast and mix thoroughly. Let the mixture sit for 5 minutes.
2. Gradually add the mixture of both flours. After adding 1 cup of flour, add the olive oil and salt and mix them in thoroughly. Next gradually add the rest of the flour until the dough firms up and is no longer sticky.
3. Kneed the dough for about 2-3 minutes. Place the dough in a bowl and cover with a kitchen towel, and let this rise for about 2-3 hours.
4. While the dough is rising, chop the heart of palm into circular discs about ½ inch thick. Sautee the chopped heart of palm in vegan butter and lemon juice until they are seared on each side.
5. After the heart of palm has been seared, put about 2 tbsp of vegan butter in a small pot. Once it has melted, add the chopped garlic, and then add 2 tbsp of flour and whisk. Gradually add 1 cup of plain unsweetened oat milk and whisk.
6. Add about 1 cup of shredded vegan mozzarella and melt thoroughly. Then add 1 cup of water and keep whisking until it turns into a sauce.
7. Preheat the oven to 450.
8. After the dough has risen, roll the dough out, sprinkle flour on it, and roll it flat.
9. Place the flat dough on either a pizza stone or a cookie sheet. Bake for 7 minutes.
10. Remove from the oven, flip over and begin adding pizza toppings in the following order: a) garlic cheese sauce, b) seared shrimp, c) olives, d) chopped red onions.
11. Bake pizza with all the toppings for 8-10 minutes.
12. After the pizza has baked, top the pizza with arugula and balsamic vinegar.
