Vegan Malai Kofta

 

One of the best vegan foods around is Indian food. While many Indian dishes are meat-free, many Indian food recipes have some form of cheese or cream, so these can be easily substituted. We discovered this Indian dish a few years ago, and it quickly became our absolute favorite dishes.

Ingredients

Dumplings:
4lbs yellow or russet potatoes
2-3 tbsp vegan butter
¼ cup plain unsweetened oat milk
3 tbsp cornstarch
¼ cup chopped raw cashews
¼ cup raisins

Spices:
½ tsp ground cardamom
½ tsp ground cinnamon
½ tsp ground cloves
2 tsp chili powder
1 tsp garam masala
1 tsp cumin
½ tsp saffron

Curry Sauce:
½ cup of cashews
½ cup of water
2 tbsp olive oil
4 garlic cloves
1 onion
1 inch of ginger
1 tsp salt
½ tsp pepper
2 bay leaves
14oz can fire roasted tomatoes
14oz can coconut milk

Steps:
1. Soak the cashews in water for 30-60 minutes.
2. Boil potatoes. Once the potatoes have softened, drain the water, mash the potatoes, then mix the remainder of the dumpling ingredients into the mixture.
3. Add the spices to a frying pan over medium heat, and let the spices warm in the pan for 4-5 minutes to open up the flavors.
4. Add to the pan the olive oil and onions. Once the onions have softened for 5-6 minutes, add the garlic and ginger and saute for another 3-4 minutes.
5. Add the fire roasted tomatoes, salt, pepper, and cashews and then cook for another 4-5 minutes.
6. After these have cooked, add to a blender, blend thoroughly, then add back to the pan. Add the coconut milk and bay leaves and cook over low heat for about 20 minutes.
7. While the curry is cooking, prepare some rice.
8. In a separate pan, add some oil over medium heat. Pull out some of the dumpling mixture and create a ball about 2 inches in diameter, and add to the pan. Fry the dumpling and when it has browned on one side, flip over and fry on the other side.
9. Once you have fried all of the dumplings, add them to the curry sauce.
10. When the rice is completed, put the rice on a plate, then add the dumplings and curry sauce on top of the rice.
