Vegan French Onion Pasta

When you go vegan, you quickly learn what is inherently vegan, and one of those things is pasta! Pasta itself has such simple ingredients: water, flour, oil. Now you can make pasta into all kinds of meals. Here’s one that uses caramelized onions, mushrooms, and a cashew nut Alfredo sauce. Hope you enjoy!

Ingredients

16 oz pasta
2 onions
10-12 oz mushrooms
12-14 oz spinach
2 tbsp balsamic vinegar
2 tbsp Olive oil
Salt, pepper, garlic powder as needed

Cashew Alfredo Sauce:
¾ cup of cashews
½ cup of water
2 tbsp olive oil
4 garlic cloves
1 tsp salt
½ tsp pepper
2 tbsp nutritional yeast
1 cup oat milk

Steps:
1. Soak the cashews in water for 30-60 minutes. Preheat the oven to 425.
2. Drain the cashews and put them in a blender with all of the other ingredients for the Alfredo sauce. Blend thoroughly.
3. Cut up the onions and sautee in a pan over medium heat. Sautee until the onions caramelize and brown.
4. Once the onions have caramelized, remove from the pan and add the mushrooms and some extra olive oil. Sautee the mushrooms for 4-5 minutes to soften, then add the spinach. When the spinach is wilting, add the balsamic vinegar, and cook together for 2-3 minutes.
5. Make the pasta according to the instructions. After draining the water, mix olive oil in with the pasta.
6. Add the caramelized onions, mushrooms, and spinach to the pasta and mix.
7. Add the Alfredo sauce to the pasta and mix thoroughly.
