Vegan Chorizo Sopes

This has to be one of the coolest Mexican dinners to make! It's so simple, but it's filling and packed with authentic flavors. You can customize yours even further beyond what I have included here.

Ingredients

2 cups of masa flour
2 cups of water
1 tsp salt
Vegetable or coconut oil for frying
1 can of vegan refried beans
1 can of black beans
1 large red or yellow onion
1 lime
1 bunch of cilantro
1 bunch of lettuce
1 large tomato
1 pack of soyrizo or beefy crumbly (your choice)
Salsa (optional)
Vegan Cheese (optional)
Nut Yogurt (optional)
Hot Sauce (optional)

Steps:

1. Mix the masa flour, salt, and water. Pull out about ⅓ cup of the dough and flatten to about ¼ inch flat disc.
2. Add the flattened disc to a pan over medium heat. Do not add any oil at this point. Heat the sope for 4-5 minutes, then flip the sope to cook it on the other side for 4-5 minutes. Remove from the pan and then crimp the edges of the sope.
3. After cooking each sopes, now add your frying oil to the pan and put the sopes back into the pan. Cook each side until each side is crispy.
4. In another frying pan, add your soyrizo and cook until brown.
5. When the soyrizo is cooked, remove from the pan and add the refried beans and black beans.
6. Once all the cooked elements are complete, put the elements together. Start with the sope on the bottom, next add the beans, then add the vegan meat, then add the lettuce, tomato, onions, and cilantro. Top with salsa, nut yogurt, vegan cheese, and hot sauce.
