Vegan Tomato Spinach Pasta


When you go vegan, you quickly learn what is inherently vegan, and one of those things is pasta! Pasta itself has such simple ingredients: water, flour, oil. Now you can make pasta into all kinds of meals. Here’s one that uses roasted veggies, olives, and a simple tomato sauce. Hope you enjoy!

Ingredients

16 oz pasta
1 red onion
20 cherry tomatoes
4 garlic cloves
2 tbsp Olive oil
2 tbsp tomato paste
16 oz spinach
2 vegan sausages
⅓ cup chopped kalamata olives
⅓ cup chopped green olives
Salt, pepper, crush red pepper as needed

Steps:

1. Preheat the oven to 425.

2. Cut up the cherry tomatoes and red onion, add to a baking pan, drizzle with olive oil and add salt, pepper, and garlic powder. Roast for 20 minutes. 

3. Make the pasta according to the instructions. After draining the water, mix olive oil in with the pasta.

4. In a pan over medium heat, cook the vegan sausage for 3-4 minutes. Then add the garlic and cook for 2-3 minutes. Then add the spinach and let it cook down. 

5. Next add to the pan the tomato paste. Then stir in 1 cup of water gradually. Add about 1 tsp salt, ½ tsp black pepper, and ¼ tsp crushed pepper.

6. Add the roasted vegetables to the pasta and mix. 

7. Add the sausage spinach tomato sauce to the pasta, as well as the olives, and mix thoroughly.
