Vegan Street Corn Mac

When you go vegan, you simply can’t go without Mac and Cheese. But do not worry, because it is one of the easiest things to cook with vegan alternatives. There are multiple ways to make vegan Mac, this is just one of them. I hope you enjoy this vegan version!

Ingredients

16 oz pasta
2 tbsp vegan butter
1 red onion
1 red bell pepper
3-4 jalapeños
2 cups of corn
1 tsp chili powder
1 tsp paprika
½ tsp cumin
1 tsp salt
1 tsp pepper

Cheese Sauce:
2 tbsp of vegan butter
2 tbsp of flour
1 cup of unsweetened plain almond milk
½ cup of vegan cheese (or 2 slices of vegan cheese)
1 tsp salt
½ cup of water

Steps:
1. Pre-heat the oven to 425.
2. Cut up the vegetables and roast in the oven for 30 minutes.
3. Cook the pasta according to the instructions
4. Heat the vegan butter in a pot
5. Whisk in the flour one tbsp at a time
6. Slowly add the unsweetened almond milk, and keep whisking
7. Add the cheese, stir it in, and let it melt thoroughly
8. Add salt
9. Slowly add the water, and keep whisking
10. Once the vegetables have roasted, throw them in a blender and blend, but don’t puree.
11. Mix blended vegetables in with the cheese sauce.
12. Spread the cooked pasta into a baking dish, then add the cheese sauce to the pasta and mix together. Top with some extra vegan cheese.
13. Bake for about 10-15 minutes.
