Vegan Cuban White Bean Soup

This is a classic Cuban soup, and it’s one of my favorite vegan soups. It’s really easy and affordable to make. It has awesome flavor and instead of using pork, I opted to use jackfruit to replicate the shredded pork and ham that is traditionally in the soup. I hope you enjoy this vegan version!

Ingredients

1 onion
4 garlic cloves
2 tbsp oregano
1 tbsp cumin
1 tbsp black pepper
2 cans of jackfruit
2 cans of white beans
8 cups vegetable broth
3 bay leaves
1 tsp salt
¼ cup olive oil

Steps:
1. Saute the onion in the bottom of a dutch oven or large pot for 7-8 minutes.
2. Add the garlic and saute for another 4-5 minutes.
3. Add the spices and jackfruit and saute for 1-2 minutes.
4. Add the white beans, broth, bay leaves, salt, and olive oil, then bring to a boil.
5. After bringing it to a boil, let it simmer for 20-25 minutes.
