Vegan Spicy Miso Ramen

 

One of the best Asian flavors is miso, and most people are familiar with a simple miso soup. This is a miso soup with a variety of layers of flavor. This incorporates a spicy layer, but of course you can gauge the level of spiciness that you like. I hope you enjoy this vegan soup!

Ingredients

12 oz ramen
Air-Fried tofu
1 shallot
2 carrots
4 garlic cloves
1 inch fresh ginger
4 green onions
8 cups veggie broth
3 tbsp soy sauce
3 tbsp miso paste
2 tbsp rice vinegar
12 oz mushrooms
Baby bok choy
1-2 Thai chilis

Steps:
1. Prepare the ramen noodles according to the instructions.
2. Add chopped shallots and carrots to a large pot with olive oil. Saute for 3-4 minutes.
3. Add garlic and ginger and saute for another 2-3 minutes.
4. Add mushrooms and saute for another 1-2 minutes.
5. Add green onions, miso paste, soy sauce, rice vinegar and Thai chilis and saute for another 1-2 minutes
6. Add vegetable broth and then bring to a boil. After it reaches a boil, add bok choy let the soup simmer for about 8-10 minutes.
7. Make air-fried tofu.
8. Assemble the soup, add ramen noodles to a bowl, then add the vegan ground beef, and lastly top with broth.
