Vegan Spicy Soba Soup

If you want a nice change of pace for a soup with Asian flavors, try this soup.  As much as I love ramen noodles, I equally love soba noodles.  If you haven't tried them, they are thicker and more dense, but have an awesome texture and flavor.  This soup is very easy and affordable.  I hope you enjoy this vegan soup!

Ingredients

12 oz ramen
Baby Bok choy
1 onion
3 garlic cloves
1 inch fresh ginger
5 green onions
8 cups veggie broth
3 tbsp soy sauce
4 nori sheets
1-2 Thai chilis

Spicy vegan beef ingredients:
Vegan ground beef
2 tbsp soy sauce
1 tsp sesame oil
3 tbsp chili paste
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp onion powder
½ tsp red chili flake

Steps:
1. Prepare the soba noodles according to the instructions.
2. Add chopped onion to a large pot with olive oil. Saute for 5-6 minutes.
3. Add garlic and ginger and saute for another 2-3 minutes.
4. Add green onions and saute for another 1-2 minutes.
5. Add vegetable broth, nori sheets, and Thai chilis and then bring to a boil. After it reaches a boil, let the soup simmer for about 8-10 minutes.
6. After the soup has simmered, add the chopped bok choy and turn the burner to low.
7. In a separate pan saute the vegan ground beef with all of the vegan beef ingredients.
8. Assemble the soup, add soba noodles to a bowl, then add the vegan ground beef, and lastly top with broth and bok choy.
