Vegan Roasted Harissa Bowl

 

We're just getting down to basics on this recipe. This is a very simple dinner recipe and really easy to make! You are going to love the combination of the butternut squash and harissa flavors. I hope you enjoy this vegan dinner!

Ingredients

Roasted Vegetables:
1 Butternut Squash
1 head of cauliflower
2 tbsp olive
2 tbsp harissa paste
Salt and pepper

Remaining Bowl Ingredients:
Rice
Hummus
Kalamata olives
1 can chickpeas
Vegan yogurt
Vegan Feta

Mediterranean cucumber salad:
10 Cherry Tomatoes chopped
1 Cucumber chopped
½ Red onion chopped
½ cup chopped Parsley
¼ cup Olive oil
2 tbsp balsamic vinegar
½ tsp salt
½ tsp pepper
½ garlic powder

Steps:
1. Preheat the oven to 425 degrees. Then roast the vegetables for 30-35 minutes.
2. Prepare the rice according to the instructions.
3. Prepare the cucumber salad.
4. Assemble the bowl in the following order: a) rice, b) roasted vegetables, c) cucumber salad, d) hummus to the side, e) top with vegan yogurt and then vegan feta.
