Vegan Pasta Primavera

 

When you go vegan, you quickly learn what is inherently vegan, and one of those things is pasta! Pasta itself has such simple ingredients: water, flour, oil. Now you can make pasta into all kinds of meals. Here’s one that uses roasted veggies and a cashew nut Alfredo sauce. Hope you enjoy!

Ingredients

16 oz pasta
1 onion
1 red bell pepper
20 cherry tomatoes
1 head of broccoli
2 tbsp Olive oil
Salt, pepper, garlic powder as needed

Cashew Alfredo Sauce:
¾ cup of cashews
½ cup of water
2 tbsp olive oil
4 garlic cloves
1 tsp salt
½ tsp pepper
2 tbsp nutritional yeast
1 cup oat milk

Steps:
1. Soak the cashews in water for 30-60 minutes. Preheat the oven to 425.
2. Drain the cashews and put them in a blender with all of the other ingredients for the Alfredo sauce. Blend thoroughly.
3. Cut up the vegetables, add to a baking pan, drizzle with olive oil and add salt, pepper, and garlic powder. Roast for 30 minutes.
4. Make the pasta according to the instructions. After draining the water, mix olive oil in with the pasta.
5. Add the roasted vegetables to the pasta and mix.
6. Add the Alfredo sauce to the pasta and mix thoroughly. .
