Vegan Korean Tacos

 

This was an interesting experiment for tacos. We wanted to make a taco with Korean flavors, so here is our attempt. Some key components to this is the vegan kimchi, if you can’t find this, you can make it yourself, but leave out the fish sauce. We feel that these turned out really good, so I hope you enjoy this taco version!

Ingredients

Korean Beef:
10-12 oz vegan ground beef
2 tbsp olive oil
2 tbsp soy sauce
1 tbsp guchajang paste
2 garlic cloves chopped
1 inch of ginger chopped
2 tbsp brown sugar

Cooked Kimchi:
2 cups of kimchi
2 tbsp oil
2 tbsp sugar

Tacos:
Tortillas
Red Onion diced
Cilantro chopped
Lime

Steps:
1. Add olive oil to a pan over medium heat, then add sugar, then add the kimchi. Sauté until the kimchi caramelizes. Remove the kimchi from the pan.
2. Mix the ingredients for the Korean beef sauce.
3. Use the same pan and add the vegan ground beef. Sauté the beef for 2-3 minutes and then add the Korean sauce. Cook for another 2-3 minutes.
4. Once the Korean beef is cooked, build the taco in the tortilla in this order: 1) Korean beef, 2) caramelized kimchi, 3) Diced red onion, 4) Chopped cilantro, 5) Squeeze of lime.
