Vegan Chik-Fil-A Sandwich

When I used to eat meat, we used to eat at Chik-Fil-A. So my thought here is to re-create the Chik-Fil-A chicken sandwich, but as battered and fried tofu. This creates this traditional chicken sandwich, but served vegan. If you used to eat at Chik-Fil-A, I hope you enjoy this vegan version!

Steps:
1. Press the tofu for 30 minutes to get all the moisture out of it.
2. Mix the wet ingredients together and let them sit for 5 minutes.
3. In a separate bowl mix together all the dry ingredients.
4. In a separate bowl mix the pickle juice and sugar.
5. On a separate plate mix the dry rub ingredients together.
6. Cut the tofu into the shape you would like, and then add to the pickle juice for 2 minutes.
7. Dip the tofu into the dry rub and coat. Then dip into the wet mixture, and then put into the dry mixture. You can repeat this if you’d like a thicker battered crust.
8. Heat the oil for frying, and then dip the battered tofu into the frying oil. Fry until golden brown. Pull it out of the oil and place on a plate with a paper towel to get the excess oil off.
9. Assemble the sandwich as follows: a) buns, b) vegan butter, c) fried tofu, d) lots of pickles.
10. Serve with vegan honey mustard sauce.
