Vegan Biscuit Pot Pie

When I was a kid, I used to love my mom’s chicken pot pie. With this recipe, I’ve substituted the chicken with jackfruit. And this is a change up from the traditional pot pie, and uses biscuits as the crust on top. The substitutions for the biscuits are with oat milk and vegan butter. The vegan substitutions on this recipe are actually so easy! I hope you enjoy this vegan version!

Ingredients

Biscuit ingredients:
1 cup oat milk
1 tbsp apple cider vinegar
2 cups flour
1 tbsp baking powder
1 tsp salt
5 tbsp vegan butter

Pot Pie filling
2 tbsp olive oil
1 onion
2 carrots
4 celery stalks
3 garlic cloves
1 tsp rosemary
1 tsp thyme
1 tsp sage
½ tsp pepper
2 tsp salt
1 tsp garlic powder
24-28 oz jackfruit
¼ cup flour
2 cups water or veggie broth

Steps:
1. Mix the wet biscuit ingredients together and let them sit for 5 minutes.
2. In a separate bowl mix together all the dry biscuit ingredients.
3. Add 5 tbsp of vegan butter to the dry mixture. Use your hands to mix the butter in and make the dry mixture very flaky.
4. Mix the wet mixture into the dry a little bit at a time and mix thoroughly. Then add more of the wet mixture and mix thoroughly until it forms a sticky batter.
5. Roll the dough out, sprinkle flour on it, and roll it flat. Fold it over, sprinkle more flour on it, and roll it out again. Repeat this process 3-4 more times until the dough is stretchy and no longer sticky.
6. Do a final roll of the dough and then use a wide mouth mason jar top to cut out circular biscuits. Put these on a plate and put them in the refrigerator while you are making the pot pie filling.
7. Preheat the oven to 375 degrees.
8. Add the olive oil to a pan and saute the onion, carrots, and celery for 4-5 minutes.
9. Add the garlic, thyme, rosemary, sage, salt, and pepper and saute for another 2-3 minutes.
10. Add the shredded jackfruit and saute for another 4-5 minutes.
11. Add ¼ cup of flour, 1 extra tsp of salt, 1 tsp of garlic powder and stir into the mixture.
12. Gradually add 2 cups of water or vegetable broth and mix thoroughly so that the filling creates a gravy.
13. Add the filling to a baking dish. Then top with biscuits. Add some vegan butter to the top of the biscuits.
14. Bake for about 20 minutes until the biscuits begin to brown on top.
