Vegan Chicken Caesar Salad

 


This is a classic salad, and it is surprisingly easy to make a vegan version of it. This is a great recipe if you need to make a quick and easy dinner. Or it’s a great option if you need to make a salad for dinner guests. I hope you enjoy this vegan version!

Ingredients

Vegan Caesar Dressing (see my recipe for the dressing here)
Air-Fried Tofu (see my recipe for the fried chicken tofu here)
Lettuce
Kalamata olives
Red onion
Vegan parmesan or vegan feta
2 slices of bread
2 tbsp olive oil
Salt and pepper
1 tsp italian seasoning
1 tsp garlic powder

Steps:
1. Preheat the over to 375 degrees.
2. Cut the bread into cubes and throw into a mixing bowl. Add the olive oil, garlic powder, italian seasoning, salt and pepper, then mix thoroughly.
3. Place the cubes of bread on a baking sheet and put in the oven for 8 minutes. Then flip the cubes over and put back in the oven for another 8 minutes. If the crouton aren’t getting toasted enough, leave them in the oven for a few minutes longer.
4. While making the croutons, make the chicken fried tofu in the air fryer as per the instructions for air-fried tofu.
5. While the croutons and air-fried tofu is cooking make the Caesar dressing as per the instructions.
6. Prep the lettuce, and cut the olives and onions. Place the lettuce, onions, and olives on plates.
7. Once the fried tofu is ready, place tofu on the salad.
8. Once the croutons are ready, place on salad.
9. Top salad with dressing and parmesan cheese.
