Manny’s Vegan Chili

 

Honestly I’m not a big fan of chili, but a friend of mine asked me to make one, and this turned out way better than I expected. I used the techniques common with Indian cooking but applied it to an American chili, and the flavor is crazy. I hope you enjoy this vegan version!


Manny’s Vegan Chili

Cook Time: 30 mins
Total Time: 45 mins

Ingredients

Chili spices:
1 tbsp black peppercorns
1 tbsp chili powder
1 tbsp cumin
1 tbsp paprika
1 tsp cayenne pepper
½ tsp red chili flakes
½ tsp oregano

2 tbsp olive oil
1 onion
2 carrots
1 bell pepper
2 jalapenos
4 garlic cloves
2 cans of fire roasted tomatoes
2 tsp salt
1 can of pinto beans
1 can of black beans
1 can of red beans
2 cups of veggie broth
3 bay leaves
2 tbsp soy sauce
½ tsp liquid smoke

Steps:
1. Add the peppercorns to a dutch oven and toast for 4-5 minutes. Remove from pot and grind it up.
2. Add all of the spices to the dutch oven, and toast for 4-5 minutes.
3. Add olive oil and onion, and saute with spices for 4-5 minutes.
4. Add chopped carrots, bell pepper, garlic, and jalapeno and saute for about 5 minutes.
5. Add the roasted tomatoes and salt and cook for 5 minutes.
6. Add the beans, veggie broth, bay leaves, soy sauce, and liquid smoke. Bring to a boil, and then simmer for 20 minutes.
7. While the chili is cooking, add the vegan beef to a pan and saute until brown. Add similar spices to the meat.
8. Once the chili has cooked and cooling, add the cooked vegan beef. Stir in thoroughly.
